Cooking is an adventure – Its a fun, enjoyable journey but sometimes you don’t end up where you thought you were going.
Last week I made Armadillo eggs – they are like the Texas Twinkies but instead of wrapped in bacon, they are covered in sausage.
They start the same way as the Twinkies, create your jalapeno canoes, fill with a mixture of cream cheese and shredded cheese.
I then covered them with ground sausage and baked at 425 degrees for about 20 minutes until the sausage is cooked.
As you can see from the pictures, using full jalapenos results in very large eggs. They are really hard to pick up and eat as a snack. The next time I try these, I’ll probably cut the jalapenos in half or use a sliver of jalapeno.
