This week’s one skillet Keto meal is shrimp and sausage. Very simple and tasty.
One thing I’ve learned over the years is to do all your prep before you start cooking. It makes the actual cooking much easier and you’re not rushing trying to measure and stir at the same time. It also means less mistakes (like forgotten ingredients) in your recipes.
For this recipe, I cut up one red pepper, one tomato, and 4 links of Jalapeno and Cheese sausage from Texas Sausage company. I also bought a pound of shirmp from the grocery store already shelled. These are not the pre-cooked cocktail shrimp, just ready to cook.
Start with melting some butter in your pan over medium heat. Once melted, add the red pepper and cook until softened. Add the sausage and cook until it starts to brown. Add your tomatoes and cover the pan to let them start to cook down. I also added Whataburger Buffalo Sauce to give it an extra zing.
When the tomatoes are cooked add the shrimp, stir, and cover. Watch the shrimp as they only take a couple of minutes to cook.
Serve and enjoy.
